This dish literally screams Summertime to me.
Firm bite sized tomatoes with the perfect juicy pop when you bite into them, paired with smooth and cool mozzarella cheese and a torn pieces of basil to add that little something extra to the flavor combo.
With a 5 minute prep time, this is perfect for entertaining or just dining alfresco.
What more can you ask for after getting home from work to help you unwind.
A glass of white wine of course!

Caprese Salad Sticks
Printed Recipe
15 cocktail sticks
15 cherry tomatoes
15 small basil leaves (mine were very large so I used 8 and tore them in half)
15 small balls of fresh mozzarella (ciliegine)
olive oil & balsamic vinaigrette
salt & pepper
Pierce the tomato, basil piece and mozzarella with the cocktail stick. Repeat until all ingredients are used. Arrange on platter and drizzle with olive oil, balsamic vinaigrette and salt & pepper just before serving
